Smoked Salmon Frittata
I'm not the kind of person who loves making breakfasts. I know, I know, breakfast is the easiest to make. Usually on weekends my hubby lets me sleep in and he makes waffles for the kids or plain and simple cereal.
Occasionally when it's my turn to make breakfast I do things a little differently.
A couple of weeks ago I made this delicious Smoked Salmon Frittata for brunch which everyone loved. My meals tend to take a little more time but it's totally worth it.
Oven Temperature: 350 degrees F, Time: 50 Minutes, Serves 6-8 Persons
1 Medium Red Onion Diced
1 Tbsp Unsalted Butter
12 Extra Large Eggs
1 Cup Heavy Cream
4 oz. Goat Cheese (Montrachet) Crumbled
1/2 Lb. Smoked Salmon Chopped
3 Tsp Kosher Salt
1/2 Tsp Fresh Ground Black Pepper
3 Scallions Chopped
4 Tbsp Fresh Chopped Dill
4 cups Fresh Baby Spinach
Sauté onion and butter in oven proof omelette pan. Caramelize. Add spinach and sauté until soft. In bowl beat eggs, add cream, cheese, smoked salmon, scallions, dill, salt and pepper. Pour over onions and spinach. Bake and serve immediately.
I served with with a mixed greens salad with a simple vinaigrette with a crisp cold glass of fresh home made iced tea.
